All goodFast delivery. They say, this is the same as the champagne yeast which this replaces, but it seems different to me. But different in a good way, i like the Blanc yeast better.5Kool Aid WineI add 1/8 teaspoon of this yeast with a cup of sugar in a 2 liter plastic soda bottle. Then I fill it to within 2" of the top with hot water straight from the tap. I seal it tightly, shake it until the sugar dissolves, and then cover it with a towel. I slowly loosen the top the next day to release the pressure, and then with the top still loose I cover it again and wait a week or two. I have six bottles in rotation. I like to put the date on a piece of masking tape just so I know how old they are. When they are ripe I pour it slowly into a gallon pitcher and then add Black Cherry Kool-Aid. Other flavors will work, but I like that one. You won't get drunk, but it will take the edge off.5First time making wineIt's a must buy for any one who is start out because you don't have to worry about stuck fermentation and it works fast. When I made my first yeast baby I used 2 64oz of 100% fruit juice, two cups of sugar and one packet of yeast. It look like nothing was happening, and once I put in another packet of yeast it quickly started working. It only took a week for it to finish and not 2 weeks like people were saying. It produced a dry (not sweet) wine that can be enjoyed.5Fermentation is GOOur Fermentation took off in under 30 minutes! E491 is a great blanc strain and this RED STAR is working very well so far. We did rehydrate per instructions, added yeast food (acids/vit/minerals), and aerated in our fermentor prior to the pitching. We also keep our yeasts in a ziplock in the freezer untill ready to use, in this way they last years past experation dates on packaging. Delicious wine awaits!5This is a really good product. Seeing as it's been about a weekI've used it three times (once for hard cider and twice for fruit mead) and it's gotten fermentation going fast. Even using half a package is enough... and gets it so excited that I see my brews bubbling into my airlocks. This is a really good product. Seeing as it's been about a week, my brews aren't finished so I can't comment on the taste this creates.5Baking my own bread since I can t go to the store Shelter-in-place means you can t go out to buy bread. So I got out my rarely used bread machine and ordered yeast and a baking outfit. Practically the minute they arrived I made bread. It all worked out so well that I went back on to order more yeast. Much to my shock the price had dropped to $8 something from $12 something for the same exact amount from the same exact supplier. Kinda feeling cheated on the first buy but bought two lots the second order to make sure it doesn t go back up!The yeast is fresh and worked perfectly. We had wonderful hot fresh bread with dinner. This may be our new normal for a while, or at least until I run out of flour.5Dry.Works beautifully. Seems to ferment out very dry and strong. Had to back-sweeten frequently. Seems to suck out flavor... leaves that distinctive empty brut flavor a little to much for my taste at the moment. Springs back to life with a little sugar, so it s easy to bottle a dry carbonated wine, but seems to convert so much sugar, so quickly, it s impossible to bottle a hard soda. Before you blink an eye all the sugar is gone and you have something very dry and far too strong. I think I will have to try something with lower alcohol tolerance next.5Meh ... I'm not impressed ... It was recommended to me to use this for my home made wine instead of bread yeast, but I have found this does not work as well. The wine comes out tasting bland and having a lower alcohol content. I don't understand why since this yeast is supposed to be better. Anyway, it comes down to personal choice - I will go back to bread yeast because it is cheaper and I know it works well.33 lbs of honey and above will produce a sweet mead with a FG above 1The eleven packets are "forcing" me to brew eleven batches of mead. On batch number 5 now and found that the alcohol saturate level for this yeast is between 13.5% and 13.9%. <3 lbs of honey will produce a dry mead with the FG around 1.0 or less. Between 3-3.2 lbs will produce a semi-sweet with a FG around 1.02. 3.3 lbs of honey and above will produce a sweet mead with a FG above 1.02. Made a Cherry Melomel (sweet), Cyser (semi-sweet), an Orange Blossom Mead (dry), and a Blackberry Melomel (dry). Making a Mesquite Honey Mead this weekend.5Inactive yeastI tried to make hard cider with this yeast and it did not work. I was supposed to mix some sugar and yeast in a cup of warm apple juice (with no preservatives or anything else added to the juice) and then pour that mixture in the glass gallon bottles that contained the rest of the apple juice. After the stopper was put in the top, the apple juice was supposed to start bubbling anytime within a few days. Nothing happened after letting it sit in a cool dry place for about 1 1/2 weeks. I tried this again, and still nothing happened even though the expiration date of the yeast is 2021. I then tried plain regular yeast, and my apple juice bubbled almost immediately. I have come to the conclusion that the Red Star yeast inactive.1
