I LOVE, LOVEI LOVE, LOVE, LOVE this olive oil. I purchased this in the winter and it arrived frozen because it was stuck on the deliver truck past it's delivery time. When I received it, it was a light green (avocado shade) and I was afraid it was ruined. It thawed out and resumed it's natural dark color. I was in contact with the company who sold it and said since this is naturally made in CA, it can be frozen (in fact some customers freeze it when they purchase multiple gallons) and that the color will go back after thawed. I was so relieved and after mine thawed the taste is AMAZING. I will no longer buy olive oil from any place other than Baja Precious - Precious EVOO.5This is excellent EVOO. I have eaten it for a couple ...This is excellent EVOO. I have eaten it for a couple of years. It has great flavor. It is also actually EVOO. Over the winter, I leave the big bottle in the basement where temps drop to 40. It clouds up and solidifies as true EVOO should. In the spring or at room temperature, it returns to normal. As many readers may know, most of the so-called Italian EVOOs are actually mixes of olive and cheaper oils.Complaints about its origin are completely specious. It clearly says it is from Baja California; that is, Lower California which is in Mexico. It clearly states it is from Mexico on the label. What I got was fine for cooking, which is what I'll mainly use it for, but it isn't as high quality as I was expecting. It's bitter, rather than fruity, which is fine--but more bitter than I was expecting. It's not at all green (mine looks like Canola oil, rather than the color in the photo that's shown), and there's no peppery "bite" to it as I was hoping for. Again, it's not bad at all for cooking, but I was hoping to eat it on bread, and the flavor just isn't right for that.3Outstanding , edited: maybe notI was most pleasantly surprised by the outstanding flavor and aroma of this olive oil! I pray that each shipment is as good as this first one, absolutely delicious. The color is an indicator of quality, and it all followed from there. I'd like the seller to contact me to explain the drastic color difference.SEE PICTURE - 1st bottle received in September on the left, 2nd bottle received today on the right. Based on other reviews, I'm afraid the taste will also be drastically different, but I don't want to open and compare to the other first bottle I have in case I have to return it.I altered my rating from 5 stars to 3 because of the undeniable obvious color difference. Since I've not tasted it yet, I did not give a lower rating.Can someone please advise what the heck is the reason for such a dramatic difference in color? the beautiful green color of my first bottle is indicative of great quality, and it tasted wonderful! So disappointing.Edit again:Well, no one provided me an explanation, and I couldn't return it, so we used it. UPDATE - it wasn'tI've been buying Baja Precious EVOO for many years - long before it was available on Amazon - after reading a recommendation of it by Chef Rick Bayless. I love everything about it, from the luscious green color to the fresh, grassy notes, and it's one of my staples to dress the many fresh vegetables I enjoy.Unfortunately, my latest gallon was very disappointing. I could tell immediately that something was off, as the color was much more yellow than what was left in my existing gallon.(You can see in the photo how yellow it is as I poured it from the gallon. Hard to compare with the stock photo, but it's usually nearly green!) In a side by side taste test, this new gallon was more mild and had a very bitter aftertaste. I contacted Baja Precious immediately through its web site, but I never received a response. I've been using the gallon for cooking more than dressing- that bitter aftertaste really has a bite. I hope this was just a one off, but either I got a bad bottle, the supplier for the olives or the oil has changed, or this was cut with an inferior oil.I *really* love this oil, so I'll be ordering it again when this gallon is finished, thought I may try a single bottle first to see if the oil has changed. I highly recommend the old stuff, and again, I hope I just got a bad batch.UPDATE- I ordered a single bottle, and it was exactly the same. It looks like the color the sunflower oil, is very bitter, and is not the same grassy green olive oil I've bought from this company in the past. Very, very disappointed.1Not just from BajaI have bought two gallons of this oil. I like the oil as my everyday olive oil. The first bottle was fruitier and greener. I noticed that the label on the second bottle says it is from olives from Spain and Mexico though the ad on Amazon says: "Product of Baja California, Mexico."
